
It’s easy to get caught up in the excitement during gathering/party and overindulge with high calorie food. No worries. Here is a party pleaser, healthy, and low calorie recipe that you can fill your plate with and enjoy yourself without blowing your healthy diet.
In this recipe, halved roma tomatoes meet with avocados, onions, cilantro, lime juice, jalapeño, extra-virgin olive oil and salt to make the perfect side dish or an appetizer.
Ingredients:
- 5 medium roma tomatoes
- 1 ripe large avocado, pitted, peeled and finely chopped (about 1 cup)
- 1/2 cup finely chopped Onion
- 1 medium jalapeño chili, seeded, finely chopped (optional)
- 3 to 4 tablespoons chopped fresh cilantro
- 2 tablespoons lime juice
- 1 tbsp extra-virgin olive oil
- salt (according to taste)
Cut each tomato in half and scoop out seeds and pulp from each tomato half using teaspoon. If tomato cups are not standing still, cut small slice from bottom for it stand upright.’
In medium bowl, mix finely chopped avocado pulp, onion, lime juice, jalapeño, cilantro, extra-virgin olive oil, and salt. Once all the ingredients are mixed well, spoon about 1 tablespoon avocado mixture into each tomato cup. You can top each cup with shredded cheese or sour cream, if you prefer. Tomato cups are ready to be served.
