Marinated Potato (आलु साँधेको)

Marinated Potato (आलु साँधेको) is a classic and popular afternoon snack in Kathmandu Nepal. This dish can also be served as appetizer or as a side dish. For this recipe, it is best to bake potatoes than to boil. However, if you cannot bake, boiled works as well. Here is my variation of this recipe:


  • 1 lb Red potatoes
  • 1 cup finely chopped red onion
  • 1/2 cup finely chopped scallion
  • 1/4 cup finely chopped cilantro
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • Finely chopped green chili peppers – to taste
  • 2 tbsp cooking oil
  • Salt- to taste
  • 1/2 tea spoon Fenugreek
  • 1 tbsp paprika powder (for color)
  • 1/4 tsp turmeric powder
  • 1/4 tsp timur powder (Szechuan pepper)
  • 3 tbsp fresh quizzed lemon juice

Cut baked/boiled potatoes in to small chunks. Add onion, scallion, cilantro, garlic, ginger, green chili, salt, paprika, lemon juice, and timur. Mix well.

Heat a pan, pour cooking oil onto it. Once the oil is hot, splutter Fenugreek seed on it. Once the fenugreek seeds turn golden brown, take off the pan from stove and add turmeric and immediately pour it into the aloo mixture before turmeric is burnt. Incorporate all the ingredients well and alu sadheko is ready.
