Milk Burfi (दुध बर्फी) – Nepali style Ricotta Fudge

What is Milk Burfi (दुध बर्फी)?Milk burfi is one of the popular Milk sweets in Nepal. This sweet is offered to god during puja and can be eaten during religious fasting as well. If you have the right ingredients, it doesn’t take much effort to make this recipe and yet, it is definite to generate that “wow” effect from your audience.
Here is my variation of the recipe to make milk burfi:
- Ricotta Cheese – 48 oz
- Condensed Milk – 1 medium can
- Chopped Pistachios – handful (optional)
In a microwave safe dish, mix the Ricotta Cheese and the Condensed milk. Mix it well. Cook in the microwave for 5 minutes (medium heat) uncovered. Take out and mix well, specially around the edges to break any lumps. Put it back in the microwave 5 more minutes, uncovered. Take out and mix well. Cover it and microwave for 3-5 minutes.
Keep doing this until the mix is hard enough to form the burfi. Grease a rectangular tray and press down the mix to flatten and smooth the surface. Decorate with chopped Pistachios (press down with spatula if it doesn’t stick). Allow to cool and set for few hour hours. Cut in desired shape and serve.
