Suji, also known as rava , semolina, or sooji, Ladoos are one of the tasty desserts made from semolina, nuts, and ghee. They are delicious and yet very easy to make with very few simple ingredients. It is also one of the dessert made in many households during Tihar (Diwali or Dipawali) in Nepal. Here is my version of suji ko laddu (Sooji Ladoo) recipe:

  • Semolina/Suji/sooji/rava – 1 cup
  • Ghee (clarified butter)- 1/3 cup
  • Sugar-1 cup (according to your taste)
  • Cardamom powder- 1/4 tsp
  • Cashew nuts & raisins – ¼ cup (or nuts of your choice)
  • Grated coconut- 2 table spoon (optional)
  • Milk – 25 ml

Directions for Suji Ladoo Recipe:
Heat the pan and add ghee into it. When ghee is hot add suji/rava and roast continuously in a low flame until the aroma is released and suji is golden in color. Make sure the flame is low to avoid suji form getting burnt at the bottom of the pan. Turn off the heat and add grated coconut and sugar while suji is still hot and mix it well. Now add nuts and cardamom powder and keep mixing. Suji mixture should look like bread crumbs now. Add milk and mix for about a minute until the mixture is homogeneous. Once the mixture is at the temperature where you can touch it by hand, take some of the mixture in your palm and turn it in the shape of laddu (round ball shape of small lime/lemon size). If the mixture is too dry, add few drops of milk and mix well. Suji laddoo is ready to be served.
