There are times when good homemade soups can make everything seem right, from your diet to your healthy dinner. This healthy soup is a staple in my kitchen, and for good reason as it is simultaneously hearty, nutritious, and relatively easy to make. It can be boosted nutritionally by adding plenty of healthy greens and vegetables of your choice. It is a great soup for anyone who is trying to be more calorie conscious. Unlike most other diet food, this is nourishing as it is high in protein and won’t leave you feeling deprived.

Lentils are a small, round, lens shaped legume that come in many colors and sizes. Colors range from yellow and red to green, brown, and even black. Lentils are inexpensive, highly nutritious, and can be stored for a long time without refrigeration. I’m sharing here my “go to” recipe when it comes to lentil soup.

Ingredients:

  • 1 large onion, chopped
  • 2 large tomatoes, diced
  • 2 carrots, diced
  • 2 stalks celery, chopped
  • 1/2 cup chopped spinach (or cilantro)
  • 1 tea spoon garlic, minced
  • 1 tea spoon ginger, minced
  • 1 pinch turmeric powder (optional)
  • 1 teaspoon cumin powder
  • 1 teaspoon dried oregano (optional)
  • 1 teaspoon dried basil (optional)
  • 1 bay leaf (optional)
  • 2 cups dry lentils
  • 6 cups water (depending on thickness you prefer)
  • 1/2 cup spinach,
  • 2 table spoon freshly squized lemon juice
  • 1/4 cup olive oil
  • salt to taste
  • ground black pepper to taste

Directions

In a large, thick-bottomed soup pot, heat oil over medium heat. Add onions, carrots, and celery.  Give it a quick stir. Now, add salt, black pepper, turmeric. Cook and stir until onion is tender. Stir in ginger, garlic, bay leaf, cumin powder, oregano, and basil; cook for 2 minutes until you smell the aroma from all the herbs. Now,  stir in lentils and tomato and cook for few minutes, until tomatoes are soft. Add water and bring to a boil. Reduce heat, and simmer for about 1 hour, until lentils are soft. When ready to serve, stir in cilantro/spinach, and cook until it wilts. Stir in lemon juice.

You can serve this soup with corn bread, naan, or steamed rice.
