Aloo ko Achar (आलुको अचार) – Nepali style potato salad

What is Aloo ko Achar (आलुको अचार)?

Aloo ko achar is a popular Nepali side dish that is a must in traditional gathering. Due to its flexible taste, it can be used for appetizer or with main course and hence is a most liked dish in Nepali gathering.

It is tangy in taste as it is marinated using lemon juice. Along with lemon juice, roasted ground sesame seeds and timur (szechuan peppercorn) are other vital ingredients in this dish.

Here is my variation of recipe to make Aloo ko Achar:

  • 10 medium sized yellow boiled and cooled potato
  • 2 lemon juice
  • 4 tbsp of roasted ground sesame seeds
  • 1 tea spoon of turmeric
  • 1/2 tea spoon of ground timur (szechuan peppercorn)
  • Chili/cilantro leaves/salt to taste
  • A pinch of hing (Asafoetida)
  • 1/2 tea spoon of fenugreek (methi geda)
  • One Green bell pepper (cut into small cubes)
  • 2 table spoon of oil

Peel the boiled and cooled potato. Make sure the potato is not over done. Cut it into small cubes. Add roasted sesame powder, salt, chili powder, timur and lemon juice and let it marinade for few mins. In the mean time, heat up the oil in a frying pan. Once the oil is hot, add fenugreek and let it splutter. Add a pinch of hing, turmeric powder and cubed bell pepper cuts immediately after the turmeric powder. Let the pepper cook for about a min and then transfer this mix into the Aloo Achar. Mix the whole ingredients well , garnish with cilantro, and Aloo achar is now ready to be served. It tastes best on the day of preparation.
