What is Kwati (क्वाँटी) ?
This is a special soup made during the festival Janai purnima in Nepal. During the monsoon, it gets rainy and wet. Energy packed bean soup in kwati helps keep body warm. Due to high protien content, Kwati is also suitable to sick people to gain the strength back.
Here is my variation of Kwati recipe.
Ingredients for Kwati Preparation
- 3 – 4 cups any mixed beans (black bean /pinto bean / mung bean / chick peas / black eyed peas/ soy bean/ dried green peas etc)
- Oil – 1/2 cup
- Cumin – 1 tsp
- Fennel seeds – 1 tsp
- Cumin/Coriander powder – 2 tbsp (to taste)
- Chopped onion – 1 cup
- Minced garlic – 1 tbsp
- Minced ginger – 1 tbsp
- Turmeric – ½ tsp
- salt – to taste
- chopped cilantro – a bunch to garnish
Wash and soak the mixed beans overnight. Next day, drain the beans and place it on a dry tray and cover with thin moist cloth to let it germinate. After 2-3 days, you should see sprouts on all the beans.
Wash the germinated kwati without breaking sprouts. Heat a oil and add cumin and fennel seeds. Once they strat browning, add chopped onion and satay it until it is golden brown. Add turmeric, minced garlic/ginger and continue to cook for about 2 mins. Now add germinated kwati, salt, cumin/coriander powder and fry for 4-5 mins. Add few cups of water and cook it until all the beans are tender. Pressure cooker works best if you have one. Once beans are tender, garnish with chopped cilantro and Kwati is ready to serve.
