Edamame Salad (हरियो भटमास को अचार)

What is Edamame ( हरियो भटमास )?

Edamame is fresh green soybeans in the pod. It is a protein-packed powerhouse and is loaded with fiber. Edamame is a great source of protein for vegetarian and adds extra flavor to many meatless meals.

This salad recipe combines healthy veggies with a minimal amount of oil and can be used as diet food if you are trying to lose weight. Veggie ingredients can be varied according to your choice. Here is my variation to the recipe:


  • 1 lb frozen shelled edamame
  • 1 cup frozen chopped corn
  • 1 chopped red bell pepper
  • 1 chopped tomato
  • 3/4 cup sliced green onion
  • 1/2 cup finely chopped red onion
  • 1/4 cup chopped cilantro
  • 1/2 cup fresh lemon juice
  • 2-3 tablespoons olive oil
  • Chopped fresh garlic and ginger (to your taste)
  • Chopped green chilies (to your taste)
  • salt (to taste your taste)

Microwave edamame and corn for about 5 mins, until they are just cooked. Do not over cook or else the salad would not be crunchy. Let the mixture cool off. Once it is cooled off, combine it with red bell pepper, green onion, red onion, cilantro, garlic, ginger, and chilies.  In a separate bowl, prepare dressing by whisking lemon juice, olive oil, salt. Mix thoroughly the dressing with veggies. Edamame Salad is ready to be served.


You can add steamed beans, chopped cucumber, avocado, and some boiled pasta to this salad to make a quick healthy meal.
