Roasted Edamame (हरियो भुटेको भटमास)

What is Edamame ( हरियो भटमास )?

Edamame is fresh green soybeans in the pod. It is a protein-packed powerhouse and is loaded with fiber. Edamame is a great source of protein for vegetarian and adds extra flavor to many meatless meals.

You can buy them shelled or in the pod, fresh or frozen in any Asian grocery store.

Here is a healthy recipe with this protein packed powerhouse that can be used as snack or a side dish:


  • 2 cups frozen shelled edamame (green soybeans)
  • 2 tbsp olive oil
  • chili powder to your taste
  • salt to taste
  • 1/4 tsp dried basil/cilantro
  • 1/4 tsp garlic powder
  • 1/4 tsp cumin powder
  • 1/4 tsp ginger powder
  • grated Parmesan cheese (optional)

Preheat the oven to 400F. Rinse frozen edamame under warm water and then pat dry.

Place the edamame into a large mixing bowl, drizzle olive oil, and give it a stir. Now sprinkle all other ingredients and toss to evenly coat the edamame.
Spread the seasoned edamame beans evenly on a baking sheet, in a single layer. Bake uncovered for about 10 – 12 minutes. Stir around to ensure edamame is even cooking. Put it back in the oven for another 10 – 12 more minutes, until it is light brown in color.

Toasted edamame is ready. You could eat them either warm or cold!
