Home Made Yogurt (Curd) – दहि

Your body needs to have a healthy amount of “good” bacteria in the digestive tract. Yogurt or Curd is one of the foods that provide this good bacteria and is called probiotic food. Probiotic, which literally means “for life,” refers to living organisms that can result in a health benefit when eaten in adequate amounts. Keep in mind that only yogurts that contain probiotic are those that say “live and active cultures” and many store bought yogurts are lacking this benefit as they use pectin as stabilizer and gelling agent to the yogurt instead of live cultures. Along with probiotic, yogurt is also rich in calcium, vitamin B-2, B-12, potassium, and magnesium. Here is my version of the yogurt-दहि recipe:


There are only two essential ingredients in making yogurt at home.

  • 1/2 gallon of milk (of your choice)
  • 1 cup yogurt starter (पुरानो दहि) (from your previous batch or a small cup of plain yogurt with “active cultures” on the label)
  • 1 cup sugar (optional)

Pour milk into a large, heavy bottomed stockpot. Bring Milk to a boil. If you like sweet yogurt, add sugar after turning off the stove so that its not burnt. Now allow boiled milk to cool to slightly warmer than lukewarm. Add starter yogurt and blend together with a whisk until the starter is thoroughly distributed. Pour the prepared milk into a container with a tight fitting lid.

If the weather is warm, you can leave the yogurt container in the counter top and the bacteria will incubate properly. If the room temperature is on the lower side, you can use cooler to help expedite the bacteria incubation in yogurt. Pour about a gallon of hot water in the cooler. Place the yogurt container in it and shut the lid of the cooler. Yogurt will be ready in about 3-4 hours. Once it is firm, store in refrigerator for serving.
