Muffin/Cupcake – Quick Breakfast Recipe

The term muffin or cupcake typically refers to an individual sized cake. Muffins are in a small thin paper or aluminium cup. Here is a basic recipe for easy muffin:


  • 2 cups of unbleached all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1/4 cup vegetable oil or softened butter
  • 2 large eggs

Preheat oven to 400 degrees F. Stir together the dry ingredients: flour, baking powder, salt and sugar in a large bowl. In a separate bowl, beat egg with a fork. Stir in milk and oil. Pour all into the flour mix and combine quickly and lightly with a whisk until moistened. Try not to use electric blender as it will harden up the muffin. Once the lumpy batter is ready, pour it into paper lined muffin pan cups.

Bake for 20-25 minutes, or until golden.
Add some variations
Blueberry Muffins: Add 1 cup fresh blueberries.
Oat Muffins: Replace 1 cup of flour with 1 cup of thick oat flakes (rolled oats)
Date Muffins: Add a cup of finely chopped dates.
