Avocado Corn Salsa

This colorful salsa comes together in a snap, and yet is loaded with nutrition, Vitamin C in particular.

Ingredients:

  • 1 avocado, diced
  • 1 cup thawed frozen corn kernels
  • 1 plum tomato, chopped
  • 2 tbsp chopped fresh cilantro
  • 2 tbsp Lime juice (or to taste)
  • Salt(to taste)
  • chopped jalapeno  (to taste)


Microwave corn for 3 minutes and let it cool off completely. Combine all the ingredients in a large bowl and toss around to evenly distribute all the ingredients. Avocado Corn Salsa is ready. Easy!
